Serving Size: 6 - 3.5 ounce serving cups
This is a no-bake cheesecake cup with dairy free cream cheese mixed with your choice of low glycemic coconut sugar (will turn cream cheese a light brown color and is allergen friendly to all autoimmunity, unless you have a coconut allergy) or Organic Cane Sugar (Alpha Gal Friendly Cane Sugar).
Bottom Layer: Homemade “graham cracker” crumbs made from millet flour, sorghum flour, tapioca flour, coconut flour, psyllium husk, coconut sugar, olive oil, apple cider vinegar, baking soda and active dry yeast.
Cream Cheese Layer: Dairy Free Cream Cheese is whipped with the sugar of your choice above into a creamy texture. This cream cheese contains coconut oil and potato starch.
Fruit Topping: Fruit of choice is fresh fruit simmered into a coulis, cooled and then poured on top of the cheesecake.
